Sago with coconut milk

Sago is very popular in Asian countries. We do it in different ways. Sago in coconut milk is very nice. It soothes your body. So simple to make. With lots of coconut milk  makes it very creamier in taste. If you can use the freshly squeezed coconut milk it tastes much better than caned milk. Canned coconut milk has a different flavour when compare to the fresh coconut milk.Some times I use coconut milk powder. Its still better than the ones in cans.

We always wash sago several times. After ad water to soak the sago. This process makes the coking easier. It absorbs all the water and plumps up.

Instead of brown sugar Sri Lankans add palm treacle in to it to get more taste. Then it looks nice and colourful. you can add maple syrup, Manuka honey or bees honey instead.

when we had sore throat or pimples my mum used to cook this with coconut milk to cools down our bodies. We loved the sago always. I like hot sago than the chilled. I feel when you chill the sago you get less flavour than the hot dessert.

This recipe is completely vegan and vegetarian too. If you don’t like coconut milk add almond or rice milk  instead.

if you like to serve sago as a dessert add a bit more coconut milk and make it thinner. Its very  common to see street vendors selling sago drinks in busy streets of Sri Lanka.

Take about 1 cup sago and wash several times. Put 2 cups water and leave to soak 1 hour.

Into 2 cups of coconut milk add a pinch of salt.

Add enough brown sugar to your taste. and mix well.

After add the soaked sago in to it and mix well.

Put it on the stove and stir well.

keep on stirring until it thickens . After take off the fire.

Its ready to serve hot or chilled.

How to Make Falooda (????? )

Falooda is one of the most beautiful drink that you can find almost every restaurant in Sri Lanka. Almost every day is a warm day there and falooda has a good market every day. Not only that its very popular in India and some several other countries.The unique taste to its own, make this drink a real time favourite to any one. The colour of the drink is very attractive too. Not only it helps stop the thirst it can stop your hunger too.

I have uploaded a recipe about royal falooda too. Its not only a drink its a dessert  too..There is a little bit of difference in these too drinks. if you cant find the Basil seeds or the casa casa seeds try to find chia. Chia is very popular these days and easy to find all around the world.

Instead of milk you can always use the condensed milk. The only thing is will be a bit more sweeter then. If you like more colour you can colour the vermicelli too.

When making the rose syrup or the sherbet syrup make sure to taste it as the rose essence is very strong than the rose water.

Try making your own falooda at home. I am sure that you will be thinking of  making it again and again after.

  • Milk
  • Soaked Basil seeds/ chia seeds
  • Sherbet syrup
  • 2 Different flavours of Jelly
  • Ice cream
  • Cooked & chilled vermicelli

How to Make the rose syrup/Sherbet Syrup

  • 100g sugar
  • 1 cup water
  • 1tsp rose essence
  • 2 Tblsp rose water
  • Pink Food colouring

Method

  • Boil water with sugar and rose essence and then add colouring. Simmer for 5 minutes and store in fridge.
  • Prepare everything and leave in fridge to chill.
  • Take a tall glass and add Milk.
  • Add sherbet syrup, vermicelli and jelly.
  • After add basil or chia seeds, & Finish with a scoop of ice cream.

Sri Lankan Style Avocado Smoothie

In Sri Lanka avacado grows in almost all the parts. But the most popular is up country. When I was in Galle ( southern part of Sri Lanka) , we had a huge avacado tree in front our house. The avacado were so big and one is too big for one serve. I cant forget what happened to me when I was trying to catch an avocado and it fell on to my nose. I was bleeding All  the way to the house and my mum and dad were  tried hard to stop the bleeding. Finally I was ok but couldn’t go to school for a week as I had a swollen face ……hah ha….

Ingredients 

  • 1 Large Avacado
  • Several ice cubes
  • Several scoops of vanilla ice cream
  • Milk
  • Vanilla
  • Sugar

Method

  1. Scoop the avacado in to a mixer and add the ice cubes.
  2. Then add milk,vanilla ice cream.
  3. Whisk 1 minute.
  4. Add a scoop of ice cream on the top.
