Eggplant Fried Rice (Simple Meals)


Eggplant fried rice is a simple but elegant  meal that anyone can try in few minutes. Its a one pot meal that can be cooked in few minutes. Adding all the vegetables  with nuts makes it a  complete meal. Add the vegetables to your choice.

I try to do more vegetarian and vegan friendly. If you are a person who needs meat for every meal try doing something like this at least a day for the week and you will be amazed to how tasty these meals are.

Adding variety to your meals take you out from eating the same meals. The fried eggplants are so yummy. When you fry the eggplants make sure to soak them in salt water with a bit of  turmeric. It will keep the eggplants  away from browning and also takes the liquids out from eggplants.If you consider about oil in your meals try grilling the eggplants but fried is the best.

I do a lot of gardening in my spare time and these beautiful eggplants are directly from my garden.  I will write more about easy organic gardening soon on my bog.

Eggplant Fried Rice (Simple Meals)

Ingredients

  • 4 Cups Cooked Rice
  • 1 tsp fennel and 1 tsp cumin seeds
  • 1/2 cup to 1 cup almond seeds
  • 1/4 cup coconut sugar
  • 2 cups fried or grilled eggplants
  • 1/2 cup grated carrots
  • 1/2 cup coriander leaves
  • 2 tsp ginger and garlic paste.
  • several red chillies chopped
  • 4 spring onions chopped
  • 1/4 cup tamarind juice.
  • Coconut oil for stirfrying
  1. Deep fry or grill the eggplants until golden brown.
  2. Prepare 4 cups of rice. (I used 1 cup rice for each person)
  3. Prepare all the vegetables and nuts as needed.
  4. Put some oil in a pan.
  5. Stir fry ginger and garlic.
  6. Add almonds and fry until golden.
  7. Stir fry veggies and rice.
  8. Add tamarind juice and coconut sugar and mix well.
  9. Add enough salt to your taste.

Sushi Sandwiches

My daughter prefers Sushi sandwiches  every time she buy sushi. So she  she requested me to make these  these beautiful sandwiches. But in shops They are so nicely made with different outer layers. I know the prices are high due to the  labour cost,  for making them too. So I thought I will do them at home for her with one tasty filling.

I used 500 g sushi rice for this. I cooked sushi rice with the sushi  seasoning  and I added wasabi in the rice after cooking.  When you  make a larger batch so simple to please kids for several meals.

Step by step clear instructions are below with the pictures.

For this recipe I used a cup of grated pickled zucchini, 2 cups carrots, 1/4 cup sesame seeds (Both black and white)

Other than that I used one can tuna (Make sure to squeeze  the excess water out)

Mix all together.

I used 1/4 cup of mayonnaise , 2 table spoon full pickled cucumber paste and a 1/2 tsp pepper.

Cook the sushi rice according to the packet instructions. I am using 500 g rice.

Mix everything together.

Leave it aside.

Lay the Nori sheets  on the bench.

Put a a spoon full of cooked rice on it.

Lay the rice on the paper as shown in the picture.

Spread the mix evenly as shown in the picture.

Put both on each other leaving the Nori sheet up.

Press well and cut in to four and then in to triangles.

Serve with soy sauce.

The left over rice can be kept in fridge and use with in a day.

 

Sushi Sandwiches My Way....

Ingredients

  • 500g Sushi rice
  • 1/4 cup sushi seasoning
  • 2 cups shredded carrots
  • 1 cup grated pickles cucumber
  • 1 can tuna
  • 1/4 cup black and white sesame seeds
  • 1/4 cup mayonaise
  • salt and pepper
  • 2 table spoons cumber spread
  • 1 packet Nori sheets
  1. Cook the rice with sushi seasoning as to the packet instructions.
  2. Mix all the vegetables with tuna and leave aside.
  3. Spread the rice on the Nori sheets .
  4. Then spread the vegetable and tuna mix on rice and cover with another sushi sheet with rice on top. Press and cut in to triangles.
  5. Serve with soy sauce.

20 Minutes Nasi goreng

Life is much easier if you can create your meals in few minutes. We all are having busy lives and find hard to create a good & well nutritious meals for the family. This  Nasi Goreng will help you to create a quick and simple dish in 20 minutes for the whole family.

This recipe will serve 4-6 people.

Prepare the ingredients and leave them next to you. I cut some red chilles , giner and garlic, onions, and get the oil .

Prepare chicken meat by cutting in to little pieces. Add oil in to the pan and add the chopped ingredients in to the oil and stir fry until golden brown.

Later add the chicken in and stir fry well. Add salt and pepper to season. I always use chinese chilli paste  to flavour the rice.

Add the chilli paste on to the chicken and stir fry well.

Add a table spoon full oyster sauce, a table spoon full soy sauce and 1/2 tsp corriander and cumin powders.

Grate carrots, leeks and some cabbage. Add the cut and grated vegetables in to the chicken. After add the rice.

Add the rice and add the sauces. Mix well.

 

After portion control in to a  bowl  and press well. Put it upside down. Take the bowl out.

Serve with a porched egg, sliced cucumber and tomatoes.

How to cook Black Rice with coconut Milk

Black rice is creamy in texture and nutty in flavour when cooked. Its called forbidden rice too. Its famous for it colour and the history and it is a kind of a very old rice too. It has lots of nutritional values and medicinal values too.

The colour of the rice is really looking good when served and now a days its used in restaurants too. It helps to maintain good weight and also help in controlling in inflammation.

I like black rice can be cooked  either as plain or even with coconut milk.  You can serve this with a spicy dish with some spiced chilli sauce or even with fresh fruits like mangoes or pineapple.

Chicken, Mushroom & Leek Risotto

Chicken and leek risotto is a simple and easy one pot meal for a busy day. All in one dishes makes the life easy too. This will be a real treat for a busy week day nights dinner. If you have left overs make sure to freeze them for future use too.

When you cook risotto there are simple things to remember. It helps you to get the perfect and the nicest risotto ever.  It needs cooking in several steps. Its called the absorption method. For this you need to stir fry rice fist with the oil or the butter. Then cook with the alcohol and adding hot stock in several batches for the perfect cooked risotto.

 The Italian risotto rice the best for this. But as a cheaper option you can use medium grain rice too.

I used one kilo risotto rice for this as I always freeze the leftovers. You can get the amount you like and use this as a guide for your meal too.Used about 750 g diced chicken rice too.

Cut one or two large onions and several cloves of garlic. Get some bay leaves too. Slice about 300 g mushrooms.

I used about 300 g finely sliced leeks in this too. Other than that you need about a cup of whipping cream and a cup of dry white wine or dry sherry too.

Add about a table spoon or two oil or butter in to a pan and fry the chicken until slightly brown .

When the chicken is slightly brown add the mushroom and the leeks in to the pot , season with salt and pepper.

Cover the pot and cook until the it is well cooked.

Take the chicken, mushroom and leeks out and  add some butter in to the pan. Add the chopped onions, garlic, and the bay leaves .

Stir fry really well.  When the onions are translucent add the rice.

Stir fry the rice really well until the rice is looking glassy. After add a glass of wine and let it absorb to the rice completely.

Add the stock 1/2 cup and Stir continuously. And add later another 1/2 cup and keep on doing it until the rice is firm and creamy.

Keep on adding stock and stir until the rice is firm and creamy.

When ready add the cream. Stir well.

After add the chicken , mushroom and leek mix and stir well serve hot.

How to Cook Black Rice

Black Rice is called as forbidden rice. Its originated in Asia and famous all over the world for its health benefits. Mostly for the level of antioxidants, vitamins , Minerals and fibre. It was a precious rice that only the emperors used in some Asian countries.  The black colour comes from anticyclonic, a powerful antioxidant. Some times the colour of this rice may vary from dark purple to black.

For me I find its very nice and creamy in taste. The colour goes light once cooked but this rich and the creamier taste makes it goes well with anything.

This recipe is for one cup of black rice. Black rice needs overnight soaking. Now you can buy parboiled rice that doesn’t need soaking at all. Soaking makes it easy to cook.

You can buy black rice online or in health shops.

Lets do it step by step…………………………….

Measure one cup rice and wash thoroughly several times and soak 30 minutes.

For each cup of rice add 2 cups of water.

Add enough salt and cook on high and bring the water to boil and then reduce the flame and cook on low until dry.

Once well cooked it will look like this. Serve with anything as you wish. You can freeze this rice individually up to 3 months.

 

How to Cook the Perfect Basmati Rice

Basmati is a long grain rice famous all over the world. Its an aromatic long grained rice with very light nutty flavour. There are different brands but when you buy go for the best quality. Its not only  a famous rice all over the world. Cooking basmati can be tricky if cook it rarely. So I have written all the steps you need to follow.

Cooking Basmati is very simple but to get it right there are few steps to follow.

These are the steps………

This recipe is for 2 cups of Basmati rice. Add the rice in to a bowl.

Soak the rice for 1/2 an hour.

Wash several times and drain the water completely.  Better to pass it through a strainer. If you leave any that will count on to the water and your rice can go sticky. Add salt to the rice to your taste.

For each cup of rice add 11/2 cups of water.

Put it on the stove cover well and bring the water to boil. Lower the heat and simmer until there is no water. Switch off and leave covered about 5-10 minutes.

The steam in rice helps to cook the rest and it becomes fluffy. Fluff using a fork or a chopstick.

Stir fried Chicken and vegetable Quinoa

Quinoa is gluten free super food that you can use instead of rice. Replacing quinoa instead of starchy products will give you lots of proteins as well as a lot of minerals and vitamins. Its very famous for its omega 3 fatty acid levels too. It is also a very good source of calcium, magnesium and manganese.

Cooked seeds become fluffy and creamy, slightly  crunchy. It has a delicate and  nutty in  flavour, Its good for salads side dishes or even making snacks. I want to show the right way of cooking them with a bit of flavour as cooked in restaurants. When you add flavour it can be eaten with anything too.

This will give you an idea on how to use as a main meal and also how to freeze a meal.

When you buy Quinoa make sure to buy organic quinoa. There are 3 types.white , black or mixer of black and white.If you are doing this for a salad black and white the best. I always buy the organic quinoa.

Prepare some vegetables. Grate some carrots, cut some red and green capsicums onions celery and some leeks with some garlic.

  • 1 tsp stock powder
  • 25 g butter
  • 250 g diced chicken
  • 1 tsp ginger and garlic
  • 1 onions sliced
  • 1/2 cup sliced celery
  • 1 cup red green peppers/ capsicums
  • 1 carrot grated
  • Salt to your taste
  • 1 tsp coriander and cumin powder.
  1. wash the quinoa well and add 2 cups of water with stock powder and butter.
  2. Bring to boil and cook on a low heat covered.
  3. Slice peppers, carrots and onions.
  4. Cook chicken separately with salt and pepper.
  5. Add some oil in to a pan.
  6. Fry ginger and garlic.
  7. Add all the vegetables and chicken and stir fry well with the spices.
  8. Add the quinoa.
  9. Stir well.
  10. Serve hot or freeze in separate containers.

Home Made Sushi (Step by Step)

Sushi is an easy to make but very expensive to buy healthy meal or can be used as a snack. One piece of sushi cost over $2.50. But When you make it your self You can make a lot for that money. Its all about the labour cost.

When I have time I make a big batch of sushi and leave in fridge for snacking. The kids finish it very soon any way. When you do the Sushi at home you can put any filling to your liking. This is a guide for making sushi at home.

This recipe is for 500g sushi rice. To Make sushi you need Sushi rice ( For a cheaper option you can always get medium grain rice) Sushi seasoning. Always cook the rice according to the packet instructions. After cooking Add sushi seasoning and leave to cool in a bowl. I use a small fan to cool it soon. When cooking rice add a bit of salt too.

I used Tuna as a filling. I used 1 medium size can of tuna. In to that I added Aioli. You can use mayonnaise or any other creamy sauce to your liking. Tartar sauce will be nicer too.So drain the tuna well and add sauce, pepper . Mix really well. You can add anything you like to make much tastier. ????

I used red capsicum, carrots and celery as vegetables. scrambled eggs with out milk. (Just add butter and scramble the eggs). Avocado too. The creamier and rich taste of avocado gives sushi a very nice flavour too.

You need Yaki NoriSheets (Made of sea weed) , a bamboo mat or a mould like what I used. ( 2nd picture) . Those moulds are available online. Bamboo mat is the cheaper option. You can buy a mat from supermarkets or Asian style super markets. Even the seaweed sheets are available in those.

When the rice is ready lay the bamboo mat and then put the nori sheets on top. Spread the rice using a spatula or wet fingers. If you are using the mould put rice to both sides and then use the stick init to make a hole to spread vegetables.

If you are using the mats follow these few steps.

  • Spread rice on the seaweed sheet.
  • Add your filling to the corner closer to you.
  • Fold the mat with the filling to the end.
  • You will get a roll like the third picture as the end results.

If you are using the mould

  • Add rice first.
  • Then press the middle using wet fingers to make a gap.
  • Put the filling in and clip and lock. Press well with the given handle.

If you are using the mould the final out come is like this like in first picture.  Cut the sushi rolls to the size you like and serve with soy sauce.

Kids will love to have them in their lunch box for sure. Enjoy!
