Creamy mango Pudding

This creamy mango pudding is a simple dessert that you can try during summer time. Its so simple to make and will not cost a lot at all too. This is a very popular dessert in Asia. When the mangoes are in season try this this recipe with fresh mangoes. You can use frozen or canned mangoes for this too.

If you are a vegetarian try making them with agar agar powder with out gelatin powder. Instead of milk or cream you can add coconut milk too. So it becomes vegan too.

Ingredients

  • 1 large Mango about 680 g
  • 1/2 cup (150 g) Sugar
  • 140 ml( 5/8 cup) Milk
  • 80 ml (1/4 cup) Cream
  • 10 g (1 TSp)gelatin powder
  1. Add gelatin on to the milk to soak.
  2. Chop the mangoes and leave some aside to decorate.
  3. Puree the rest with whipping cream and sugar.
  4. Add the gelatine to the pureed mix and pour in to the prepared bowls and leave in fridge to set.
  5. Serve with the left over mangoes on top and ice cream or cream.

Homemade Marshmallows

Homemade marshmallow is  the best when you compare with the shop bought ones. You can make fifty pieces from less than 5 dollars. Its so simple and easy to make too. Gelatin , sugar and the glucose syrup are the main ingredients for making marshmallows. Glucose syrup is called as corn syrup in countries.

Making  these gives much fun as well as self satisfaction. You can use marshmallows on hot chocolate, smores and also when camping. Kids will love to burn the marshmallows over the camp fire.

You can make them with egg whites too. But these are the best as I suggest.  Making candy is really simple when you have a candy thermometer. Its worth having one if you are someone who like to make candies or fudges.

When you coat the marshmallows make sure to coat them with half corn flour and half confectioners sugar, also called as icing sugar.I have missed that clip when I did the video. make sure to coat on the corn flour and icing sugar mix well before sifting the excess sugar out.

I did this recipe with lots of adjustment and with my previous experience. So this recipe is guaranteed 100% to get good quality marshmallows as the same as from shops.

Ingredients

  • 30 g (3 Tsp) gelatin powder
  • 250 ml (1 Cup) cold Water
  • For the syrup............
  • 125 ml (1 Cup) cold water
  • 460 g (21/2 cups )Sugar
  • A pinch salt
  • 230 g (3/4 cup) corn syrup
  • Food colouring to your choice
  • Vanilla or any other flavour
  • 1/2 cup of icing / confectionery sugar
  • 1/2 cup corn flour.
  1. Mix 1/2 cup of corn flour with 1/2 cup of icing sugar.
  2. Prepare a tray with baking paper on and sprinkle icing sugar mix.
  3. Add water directly to the mixing bowl that you are going to use.
  4. Sprinkle the gelatin powder. And leave it to soak in the water.
  5. next add other ingredients in to saucepan and bring to boil.
  6. Bring the sugar, corn syrup and water to the boil with out stirring and put the thermometer.
  7. When the the temperature is closer start whisking the gelatin.
  8. When the temperature of the sugar syrup reaches the point 120 c or 350 f start adding the hot sugar syrup in to the mixing bowl. make sure to keep on whisking while pouring. (Do not put the speed to high at once as it can splash on to you)
  9. When the mixture reaches the right consistency as shown in the video take out and pour on to the tray with a baking paper.
  10. Sprinkle icing sugar on top too.
  11. Leave to rest about 12 overs.
  12. After take out and cut as you wish.
  13. Dip in the corn flour and icing sugar mix.
  14. Use a strainer to take the excess sugar out. Store in an air tight container or leave in fridge.

Deep Fried Spicy Mushrooms

I make these for a vegetarian friend who visited recently. Its so easy to make and tastes really creamy and spicy.  I added one egg in to the batter but if you are a vegetarian you can omit the egg totally.

When you want to do this make sure to cut across or slice . That way the flavours goes through the mushrooms and makes it so tasty. I used button mushrooms for the recipe but any other mushroom will do the same. I like to use the oyster mushrooms too. You don’t need to cut the oyster mushrooms as it can absorb all the flavours well. Try this recipe with different types of mushrooms.

I used 500 g  for 8 people. You can serve this as a side dish or even as a finger food too.

This is 500 g mushrooms.

You will need 1 egg and some milk.

You will need 1/2 tsp chilli powder, 1/2 tsp cumin powder and 1/2 tsp coriander powder and salt to your taste.

I added 1 teaspoon baking powder with one cup of plain flour.

cut each and every mushroom to four as shown in the picture.

Add all the ingredients in to a bowl with 500 ml  milk.

After dip the mushrooms in the batter.

Put a pan on the stove with some oil and leave it to be hot. When the oil is hot add the dipped mushrooms and deep fry until golden brown.

Serve the fried mushrooms with a sauce or a chutney.

  • 500 g Mushrooms
  • 500 ml Milk
  • 1 Cup flour
  • 1/2 teaspoon full chilli powder
  • 1/2 teaspoon cumin
  • 1/2 tsp coriander
  • salt to your taste
  • 1/2 Tsp garlic powder
  • 1/4 Tsp turmeric powder
  • 1 teaspoon baking powder
  1. Clean mushrooms and cut in to four as shown in the picture.
  2. Add all the spice powders on to flour and add milk to make a thick batter. You can always adjust milk and flour to make a thick batter.
  3. Dip the split mushrooms and dip in the batter.
  4. Leave some oil on the stove and leave it to be hot.
  5. Put the mushrooms one by one and fry until golden brown.
  6. Drain on paper towels.
  7. Serve the mushrooms with a chutney.

Multi Flavour Sandwiches in 10 minutes

Sandwiches are the easiest meal that you can try in few minutes. But when you make sandwich its much better if you can make each with different flavours. I always make them with different flavours. This is a great idea when you are making them in bulk too. If you are doing it for a party or a brunch try making them in different flavours and colours.

Yogurt & Mango Panna Cotta

Panna Cotta is an easy dessert to try with fruits or with out fruits. This is a simple summery dessert. Normally panna cotta is made with  fresh cream or whipping cream. Adding yogurt in to it made it healthy as well as less in calories.

All the different types of fruits goes well with  panna cotta. Specially, mangoes, strawberries , blackberries or raspberries gives a nice and a beautiful colour to this dessert.

Doing this dessert in individual moulds works well too. You can make a coulis or puree fresh fruits to serve with this to give additional flavours and colour.

Mango Panna cotta

Carnival Bows – Crunchy Sweet Snack

These tiny little bows are really yummy. They are not very sweet. Thats why added icing on top. They are just right to go with a nice cup of coffee.

When you make them make sure to pack them in air tight containers or in bags to keep them fresh and crispy.  You can keep them for about one week . If you like it more sweeter add some sugar in to the mix.

 

Ingredients

  • 280g  Plain flour
  • 70g Corn Flour
  • Pinch of salt
  • 2 Tbsp. Sour cream
  • 5 Egg Yolks
  • 60g Butter
  • 60ml Baileys Irish cream or fruit juice

Method

  1. Add flours, butter, salt and mix well.
  2. While mixing add sour cream and egg yolks. Mix until all start combining.
  3. Next add the  Irish cream and mix until a smooth dough ball forms.
  4. Divide the dough in  to equal size pieces. Roll each dough piece in to a thin layer.
  5. Using a pasta cutter, or a knife cut in to strips.
  6. Then again cut across in to small rectangular shapes.
  7. Press ends to make a  bow.
  8. Prepare and pack on a tray.
  9. Heat some oil in a pan or your deep fryer.
  10. When the oil is hot add a batch of bows in to it.
  11. Fry until golden brown.
  12. Drain on paper towels.
  13. After sprinkle some icing sugar on top.
  14. Serve with  a coffee.

Afghan Bolani Bread with Leeks

Afghan Bolani bread is a traditional  flat bread filled with vegetables . This can be served as a side dish or as a main dish. Bolani is a vegetarian and a vegan dish.

Cut 2 Large leeks in to fine pieces.

This step is optional. Cut several green chillies. (Always add to your taste)

I added some chilli flakes , 1/2 tsp coriander powder, and enough salt to the  taste

I used 3 cups of plain flour to make 12 leeks stuffed flat bread.

Add some salt to the flour.

Add enough water to the flour and make smooth dough. If you are hand kneading make sure to knead until its not stcking on to your hand.I used the machine.

Roll the dough to a circle.

Then Make balls out from each piece. Leave 10 minutes on the bench top covered with a damp cloth. Then it becomes easy to work with.

Divide the leeks in to 12 equal parts. Put one part of the leeks mix on to the middle of the circle.

Cookie Dough Fudge (No Bake/ No Eggs)

Cookie dough fudge is a simple and easy no bake and egg free recipe. So easy to make. Not only that you can always freeze them for future use.

When you have time try making the cookie dough balls and leave in fridge. Next you can make the chocolate layer in few minutes. This can be done with white chocolate and make cookie dough balls with dark or milk chocolate too.

This a simple and easy idea for school events , brunch, or even kids birthday parties.

Enjoy making them and share with some friends to have a coffee.

Ingredients

For the cookie Dough

  • 60g Butter
  • 65g Sugar
  • 30ml Milk
  • Vanilla
  • 100g Plain flour
  • 75g Chocolate chips

For the fudge

  • 300g Chocolate melts
  • 50ml Condensed milk
  • 40g Butter
  • Extra chocolate chips
  • Vanilla

Method

  1. Add sugar, butter  in to a mixing bowl and mix well.
  2. Into that add vanilla and flour and mix well.
  3. Lastly add the chocolate chips and mix until it combines.
  4. After make balls and leave in fridge.
  5. Add condensed milk, chocolate, and add butter and melt in a pot on the stove.
  6. After pour it over the cookie dough balls and decorate with the left over chocolate.
  7. Put in fridge over night or until sets.
  8. Cut as you wish.
  9. Leave in fridge or freeze them to take out when you want.

Tiramisu…with a simple guide (No Eggs)

Tiramisu is a beautifully layered Italian dessert, normally made with raw eggs in and as a custard. I did this with out eggs. One reason is it to give an idea for those who don’t consume eggs.

If you do not like to use liquor please don’t use any at all. Even this tastes beautiful with out eggs and liquor. Instead you can add pure vanilla paste to get more flavour.

All you need to remember is not to soak the cookies longer time. If you dip them longer it can break easily and will not get a nice layers like in my picture. When you leave it over night the flavours go through all the cookies and liquids get absorbed and becomes like at hick slice. I have friends who change the recipe and dip the cookies in drinking chocolate than in coffee. That way it gives a beautiful chocolate flavour to the slice.

Ingredients

  • 250 Mascarpone
  • 3 tbsps. Marsala/Rum (optional)
  • 20g cocoa
  • Savoiardi Sponge Finger 
  • 75g Sugar
  • 300ml Coffee
  • 1 tsp Vanilla
  • 300ml Whipping Cream

Method

  1. Whip the cream with sugar until it reaches to the soft peak. Take out.
  2. In to the same bowl add the mascarpone cheese, vanilla, liquor, several spoons coffee and whisk several minutes.
  3. After add the whipped cream in to the mixing bowl. Mix well together.
  4. Dip the cookies in coffee.
  5. Spread a layer of mascarpone.
  6. Continue with several layers.
  7. Finally spread another layer of mascarpone and sprinkle some cocoa or grated chocolate.
  8. Leave in fridge overnight.
  9. Cut and serve with more cream or ice cream.
