Asian Style oven baked whole fish

I bake fish in oven quite often. This is one way of doing it. The more the flavours  the more goes through the fish. It helps to take smell out from the fish and even those who dislike  fish will eat this way.

Buy a good soft fleshy fish for this. I am using a Baramundi and it weighs about 900 g. Take the fish and descale the fish well. Take all the fins off too. Clean the guts and the gills. Wash inside and out thoroughly.

If you can leave the marinated fish over night in fridge is the best. So all the flavours absorb in to the flesh of the fish and make it more tastier than baking it at once. When baking make sure not to burn the fish.

This recipe will serve 4 people.

Leave the fish on the chopping board and descale and remove guts and the gills.

Cut across the fish as shown in the picture. It helps the marination goes through every corner.

I used juice of one large lemon, salt and pepper, garlic powder, oil, crushed chillies,and soy sauce for this.

Add all the ingredients in to a small bowl and mix well.

Put everything on to the fish. Rub the spice mix all over the fish.

Line a baking tray with baking paper and and put the fish on and leave to marinate.

 

Bake on 180 c about 30 minutes. (Baking time will vary from size of the fish)

After baking the fish prepare the ingredients needed for the garnishing. I used several finely sliced chillies, onions and garlic with with some curry leaves. Fry the above ingredients in a table spoon full coconut oil and pour over the to fish.

This will give a nice zing as well as flavours to the fish.

  • 1 table spoon chilli paste
  • 1 tea spoon full garlic powder
  • 1 tablespoon full oil
  • 1/2 tsp pepper
  • enough salt to your taste

  • several red chillies chopped
  • curry leaves
  • 1 sliced onion
  • few cloves of chopped garlic
  • Coconut oil for frying
  1. Descale and clean the fish.
  2. Cut across.
  3. Mix the ingredients for the marination and spread on the fish. (Both Sides)
  4. Bake on 180 c about 1/2 an hour.
  5. Put some oil in a pan and fry all the tempering ingredients and pour over the fish.
  6. Serve with a nice salad.

Salmon and Vegetable Pasta Bake

Salmon and pasta bake with vegetable is a simple and easy one pot & budget  meal  that you can try in few minutes. Assemble everything you are trying to use for this recipe. It will take few minutes to prep. Be multi tasking. Boil the pasta and prepare and cut vegetables at the same time.

If you like you can use the fresh salmon in this too. This recipe will serve 4 people. You can make a large batch of pasta and freeze in individual containers and use when you need. You can put them directly in your lunch box. You dont need to thaw the pasta.  It will be thawed when you are ready for lunch.

I am using frozen vegetables. Its handy  to have frozen or canned vegetables. When you dont find time or  feeling lazy use the frozen or canned vegetables.

This recipe will serve 4 people
  Ingredients for the Recipe is below the pictures.

All you need is chopped parsley and onion and some green onions (Spring onions)

Open one can of salmon and take the skin off.

1/2 cup of corn and  peas.

Boil 250 g pasta according to the packet instructions and strain and leave aside.

You will need two teaspoon full flour, and two tablespoons full butter

Put the butter ina pan and leave to melt (make sure not to burn butter)

Add flour in to the butter and cook few minutes.

Add the milk bit by bit and whisk well until there is no lumps.

After, cook until it thickens

Add  a tablespoon full stock powder, 1/2 tsp pepper and enough salt.

Mix with the flour and the chopped ingredients

Mix well and leave aside.

Mix all the other ingredients

Put in to a baking tray.  cover with cheese

Bake until golden brown.

Leave  5 minutes to rest before cutting.

Serve Hot.

Creamy Garlic and Lemon Chicken

If you like a meal in a different way try using this recipe for a change. I used chicken breast in this recipe. My famil;y love this dish. I always serve this with a nice side salad. You can even try on crusty or toasted bread. If you like to create a onepot meal try adding extra vegetables and you willget a nice dish for a dinner with no time.

To create a meal you can add potatoes, carrots and celery. That will add extar flavours too.

Breakfast Strata / Breakfast Bread Casserole

We live a world that where millions of people starving everyday.  Try not to throw out food unless it ‘s rotten or nor way of using it. Always you can use the left over food for  creating different types of meals. This is one way of using left over food in a meal.

When you have left over bread & meat  try using them in a casserole like this. When you have left over meat from a roast or a meal and the last bits of vegetables this will be an option.

if you are not a person  who like to have any meat  try adding vegetables only. Finely sliced leeks, grated carrots or pumpkin will be very nice in a casserole like this. Cheese is optional but at the end it give s a nice crust and also extra taste to this dish.

This is a budget and a one pot meal. You can bake this the day before. This will be good for breakfast or even dinner too.

Chicken & Corn Breakfast Muffins

This is a another one pot meal that you can try in few minutes. This can be served as a starter Or for breakfast or even for as snacks for the kids. If you want this as finger food can be done in mini muffin pans too.

You can mix anything instead of corns or either chicken in this recipe. Only thing is add the same amount only.in this recipe.

Its really simple to clean the corn. Peel it first and then shave the corn to a bowl. Its so nice and creamy when you fresh corn in your recipes than using frozen. When you buy corn make sure to buy the young ones.

Adding spinach is  bit tricky. It can give extra water. So make sure to leave the spinach out to drain after washing.

Chicken & Leek Savoury Tarts

These little tartlets are really good and so simple and easy to make. They do not need any proofing like other breads.  It can be made in less than an hour. It makes a full meal when you add a topping with meat and vegetables. Also can be served as a side or as a canape too.

Instead of the meat I used left over meat from the roast or even a simple curry with vegetables  will be good on this tart. After baking it gives a nice golden colour crust too. Make your own filling for this and enjoy!

Green Pea & Ricotta Cannelloni

One pot meals for busy night is an ideal option. This recipe is so easy to do. You can cook and freeze this meal with out a problem. The other way is to prepare and bake is the next day. When you have time prepare everything together for all busy week days. Plan the week ahead. So it is so simple to do.

Having spinach with ricotta all the time I thought of doing with green peas. This was so nice and creamy and so easy to prepare too. Instead green pea you can use any other kind of a legume for this too.

This recipe will serve four people.

I boiled two cups of frozen peas. Put the peas in to a pot with salted water and cook until tender.

 

Other than that you will need 2 eggs, a bottle of  pasta sauce or home made pasta sauce, 1 tsp garlic , and one finely sliced onion.

1 Pack Cannelloni and a tub of ricotta cheese

Drain the cooked green peas and lay the cannelloni on the tray.

Mash the boiled green peas until mushy.

Add eggs, onions, garlic, salt and pepper in to the mashed peas and mix well. After add the ricotta and mix well.

Later it will look like this. Put that in to a snap lock bag.

Cut the end of the bag and fill the cannelloni and lay them back to where they were.

 

Pour the tomato sauce on top. Spread it nice and even.

Sprinkle the cheese on to. Bake on 180c about 1/2 an hour or until golden brown on top.

 

Serve hot.

Low Carb Asparagus & Broccolini Frittata

One pot , budget and healthy meals are an option for a busy weekday night with out having any take away food. This Aspagus Frittata take only few minutes to prepare and cook. I always use the seasonal vegetables as they are fresh produced and also cheap in price.

Asparagus and Broccolini are good source of fibre and also comes packed with lots of nutrients. Its really nice when cooked in a meal or as its own. You can blanch, roast, or even pan fry them too.

Those who want to eat healthy and have a low carbohydrate diet to loose a bit of weight this will be good recipe.

When you want to get the tender part from asparagus hold the Asparagus from both ends and  bend down and will break giving you the tender part. The other hard part you can use in soups or stocks.

Simple and easy one pot meals like this you can get in my easy meal or the one pot meal section.

Savoury Potato bread Rolls

Have you ever tried the soft Asian style bread?  For the money you buy one you can make several at home. These are very soft potato buns that you can even try with left over mashed potatoes. All you need is mashed potatoes with stir fried onions as the filling.

These savoury potato breads are nice as a starter or as breakfast too.

To make the buns more softer you can add bread improvers , but its not necessary if you knead the bread well.

Some ask me whether I have hidden secrets to get softer buns. I never keep any secrets. All you need to do is make them quite often. Then you become a well experienced baker. Not only they are home made but also it gives you the self satisfaction. I really enjoy baking and also love to share the correct recipes with others.
